Desserts & Puddings

One of my favourite things about the diet are the puddings.
I have to hold my hand up and say I love puds, especially on a cold winters day.
There is no need to keep these for your children, they are really good enough for all the family to share.

This is a really easy 'no bake' one to get you started.

Fruit Fool
Marilyn Le Breton (C) 2013

420g tinned peaches or apricots *
400ml tetra pak Alpro Soya dairy free vanilla custard **
400ml organic plain soya yoghurt ***
4 tbsp icing (powdered) sugar

Drain off the fruit and place it in a blender and puree it until it is smooth & lump free.
Add the icing sugar and quickly blend it in.
Add in the custard & blend in.
Finally, add in the yoghurt and blend until fully combined.
Divide the mix between bowls and ideally chill for 2 hours before serving.
This makes approximately 8 child size portions or 4 adult size ones

* make sure that the fruit is suspended in suitable juice or other liquid. Glucose-fructose syrup is NOT suitable, neither is grape juice.
** this is the 400ml tetra pak only, the 4 pot long life vanilla pudding is not suitable for the diet. For a full range f suitable ready made puds please see www.respectrum.co.uk
*** it's tough to find a suitable, safe soya yoghurt in the UK (see www.respectrum.co.uk for more information on why this is so) so I make my own. I get through a lot of yoghurt with my boys in puds and in baking, so I like to make it. It works out much cheaper,  I never run out & I like to be sure that it really is suitable for the diet.
